It could have been more home made ramen, but I decided to cheat a bit, to make it in 30 minutes ;) What you see in the picture above is a vegeterian shitake ramen with udon noodles. You can get all necessary ingredients in any store with Asian or oriental food. Nuff talking, let's cook!
Ingredients (2 portions):
- one medium onion,
- one shitake mushroom stock cube ( regular vege stock cube + dried shitake mushrooms),
- 1 tsp miso paste,
- 1 tbsp soy sauce,
- pinch of chili,
- one package of noodles (here I use udon, but last time I used typical ramen noodles).
Toppings (use your favorite veggies, eggs or even meat):
- boiled egg,
- boiled broccolli,
- kimchi,
- dried seaweed, kimchi flavored.
Add 800ml of water into a pot and bring to boiling. Lower the heat and add the stock cube and chopped onion. Boil for about 10 minutes, add miso paste and soy sauce, continue cooking on a low heat for about 15 more minutes.
Prepare the noodles according to instructions on the packaging. Add to a bowl, pour ramen stock over it and add toppings of your choice.
