Foggy Saturday morning. Well, okay, I admit - it was already afternoon. Still foggy though. The last thing I was keen on doing, was to go out to buy something for breakfast. I took a quick check on what's in stock and once I noticed pears that have beeing lying in the fridge for three days, I made a quick decission: pancakes! It's the first time I used pears to make a pancake dough and I was pleasanlty surprised with the end result. You should definitely give this option a go!
1 medium pear
1/2 glass of full grain flour (I used the spelt flour)
pinch of baking soda
pinch of cinnamon
Peanut butter & honey
Whisk the eggs in a bowl then add peeled and grated pear, combile well. At the end mix in flour, cinnamon and baking soda.
Fry small pancakes (2 tbsp of dough per each pancake), both sides. Apply peanut butter on top of each pancake and then build a pile. Add some honey on the top pancake.
